Dill Salmon

  • 1 oz. fresh dill, finely chopped
  • 1 tsp. vegetable oil
  • 1⁄4 tsp. sea salt
  • 1⁄4 tsp. fresh cracked black pepper
  • 1 fresh salmon fillet, skin removed

Mix together dill, oil, salt and pepper. Coat both sides of the salmon with the dill mixture, place on a baking dish or small roasting pan and bake in a preheated 375˚F oven for 5 to 7 minutes or until the fillet is 145˚F in the center.

Can be served hot with boiled potatoes or cold with mixed greens and a simple vinaigrette.

Makes 1 serving.
